Aged in a French Oak barrel that has held Australian Tawny for the last 50 years.
This has been bottled at 61.0% ABV.
Barrels 12 and 13 and 15 are 25 litre French Oak casks which previously stored Australian Tawny. These is a first fill barrels. The whisky has been maturing for 3 years and 1 month. There are hints of toffee, creme brulee, vanilla bean. stewed apricot and old leather on the nose. The palate offers notes of butterscotch, caramel and honey.
It is only decanted when we deem the whisky to be at it's optimum.

General consensus within the industry is that 20 litre barrels require 2 years, however each barrel is different and we will only release the barrel once we feel it has reached its optimum. Generally we like to mature over three summers so all of our small cask will be at least three years old
We installed a new pot-still at the start of 2022 so we will have a steady supply of whisky from mid 2025. There will be some limited releases before then. Get in touch to put your name on the waiting list to secure a bottle.
